Ingredients:
1 Red Bell pepper
1 Can Black Beans
3 cloves of garlic
handful of mushrooms (optional)
1 cup of raw baby spinach
1 sweet onion (vadalia)
1/2 cup of Quinoa (dry)
1/2 tsp ground black pepper
1/4 tsp Cayenne pepper, ground
1/2 cup Oat flour (throw some oats in the ninja)
1 tsp smoked Paprika, ground
1 tsp salt
1/2 tsp Cumin, ground
2 tbsp ground Flax seed
2 tbsp EVOO - (1 tbsp for cooking veggies in and 1 tbsp to lube up hand when forming burgers)
Instructions
I cook these in the air fryer and they turn out truly amazing, crunchie and delicious
Make flax "egg" goup - mix your ground flax seed with 5 tablespoons of water in small bowl and set aside
Cook Quinoa as per instruction on package
In large frying pan over medium heat add extra virgin olive oil, garlic, mushrooms, onion, cook 3-5 minutes then add spinach and cook just until wilted
In large bowl using a potato masher mash up the can of black beans leaving them a little chunky
Add cooked quinoa, sautéed vegetables, salt, paprika, cumin, pepper, cayenne and flax seed mixture. Stir to combine, finally add oat flour and stir again.
Form 8 patties but first coat hands in EVOO to prevent sticking
Cook in air fryer 20 minutes and flipping halfway through until crispy edges - serve on bed of lettuce or bun with favourite burger toppings
